What Paul Brings to the Retreat

Paul’s cooking is more than food — it’s atmosphere, memory, and comfort. His retreat menus are designed to nourish and delight, blending seasonal ingredients with restaurant‑quality presentation. Guests often describe his meals as the quiet highlight of their weekend: thoughtful, elegant, and deeply satisfying.

Background & Experience

Born in Doncaster, Paul began his culinary journey in 1987 at DMIHE Doncaster, training in a variety of commercial kitchens — including the prestigious Ritz Club London. Over the decades, his career has taken him across the UK and onto world cruise ships, including the Sydney 2000 Olympics.

He has cooked for three royal families, numerous celebrities, and sports personalities, and has worked alongside some of the most renowned chefs in the world. His achievements include winning the Junior North Wales Chef title in 1995, contributing recipes to a published cookbook for the Walled Garden of Helsley, and leading his team at The Black Bull Inn (Rimmington, Clitheroe) to win Lancashire Country Pub Restaurant of the Year in 2010 — earning a place on the Michelin watch list.
